Xijiu is a celebrated sauce-aroma baijiu of Guizhou's Chishui River valley — part of the Moutai group, sharing the river's superb distilling terroir with Moutai itself. "Cellar 1988" is Xijiu's flagship core bottling and its signature classic. A sauce-aroma baijiu, made from fine local glutinous sorghum and high-temperature wheat daqu by the traditional method of "two grain additions, nine steamings, eight fermentations, seven extractions". At around 53% ABV — full-bodied and generous, with a refined sauce aroma, supple and delicate on the palate, and a long aftertaste. Best sipped slowly, neat and at room temperature from a small cup.
