Heather honey and floral sweetness on the nose, moving to green apple, ripe pear and orange peel, with a gentle smoulder of smoke — not Islay's seaweed brine but Orkney's own peat character; soft and honeyed on the palate, giving way to white pepper, cinnamon, milk chocolate and roasted nuts. 40% ABV. Highland Park is distilled on Orkney, Scotland's northernmost island group, using malt smoked over its own Hobbister Moor peat — heather-root rich and lower in salinity than Islay peat, giving a lighter, more delicate smoke with heather honey rather than seaweed brine. The brand draws on Viking heritage, with Norse carvings on its bottles.
