The Balvenie 12 Year DoubleWood (Whisky Oak + Sherry Oak)

Matured entirely in American oak, imparting warming layers of vanilla spiciness, then moved for a further nine months to European oak sherry casks to add complexity and honeyed fruit depth. Sweet fruit and Oloroso sherry on the nose, layered with honey and vanilla; smooth and mellow on the palate, nutty sweetness with cinnamon spice and delicate sherry, finishing long and warm. Balvenie's most iconic "double wood" process, created by David Stewart in 1993. The Balvenie, in Dufftown, Speyside, is the only single malt distillery in Scotland that still grows and malts its own barley, renowned for the "wood finishing" process pioneered by legendary malt master David Stewart in 1982.
