Aberlour, in Speyside, builds its core range around Double Cask Matured whisky — spirit matured separately in bourbon and sherry casks before marrying, giving both fruit and wood character; the flagship A'Bunadh is matured entirely in first-fill Oloroso sherry butts and bottled at cask strength, unchill-filtered, as a tribute to founder James Fleming.
